4 TBS butter
2 cups Cherry Tomatoes
4 tsp Herbin' Ranch Dressing and Dip Mix
1/2 tsp Smoked Garlic Powder
1 tsp THE SMOKED PAPRIKA
4 cups baby spinach
1 cup Chicken Broth
1 cup Heavy Cream
1/2 cup Parmesan Cheese
2 (17.5 oz) packages Gnocchi
1 cup Mozzarella
To make this recipe, preheat your oven to 350 degrees Fahrenheit and lightly grease a 9x12-inch baking pan. In a large skillet over medium heat, melt 4 TBS of butter. Add 2 cups of cherry tomato halves, 4 tsp of our Herbin' Ranch Dressing Mix, 1/2 tsp of Smoked Garlic Powder, and 1 tsp of THE Smoked Paprika. Cook until the tomatoes begin to burst and the juices flow.
Add 4 cups of baby spinach and cook until the leaves just begin to wilt. Next, add 1 cup of chicken broth, 1 cup of heavy cream, and 1/2 cup of grated parmesan cheese. Lower the heat to a simmer and cook for about 3 minutes until the sauce is thickened and reduced.
Finally, add 2 packages of gnocchi and toss to coat in the sauce. Transfer the mixture to the prepared 9x12-inch baking pan and sprinkle the top with 1 cup of shredded mozzarella cheese. Bake in the preheated oven for about 30 minutes until the gnocchi is cooked and the cheese is melted and golden on top.
Garnish with additional Herbin' Ranch Dressing mix and grated parmesan if desired. This dish serves 6 and takes about 60 minutes to prepare.
