To make this recipe, preheat your oven to 350 degrees Fahrenheit. Cut each zucchini lengthwise in half and scoop out the pulp, leaving a 1/4 inch shell. Microwave the zucchini shells (not the pulp) in batches for 2-3 minutes until they are crisp-tender. Chop the zucchini pulp into small pieces and set aside.
Cook the Italian sausage in a large skillet for 3-4 minutes, breaking it into crumbles, until browned. Add the zucchini pulp and cook for 3-4 more minutes until the sausage is no longer pink. Drain off any accumulated liquid.
Stir in seeded and chopped tomatoes, panko bread crumbs, grated parmesan cheese, Herbin Ranch Mix, and pepper. Spoon the mixture into the zucchini shells and place them in two ungreased 13x9 inch baking dishes. Bake the zucchini covered for 15-20 minutes until they are tender.
While the zucchini is baking, cut provolone cheese slices into 1-inch strips. After the initial baking time, add the provolone cheese strips on top of the zucchini and bake for an additional 5-8 minutes until the cheese is melted. Remove from oven and sprinkle with THE SMOKED PAPRIKA.
